Do you know cultivated meat? Typically, making this sort of meat starts with cells from domestic animals. The cells are grown in bioreactors full of nutrient-rich liquid, and then harvested, and eventually become products such as steak or chicken. In a homely kitchen of Eat Just, a startup, a slice of such meat was fried and then served with peppers. The first mouthful of it was extraordinary because the meat was grown in a lab, rather than on an animal. Meanwhile, it was also dull, because the texture, taste, look and smell of the meat was almost identical to that of chicken.

In June, Eat Just and Upside Foods became the first two companies to win regulatory approval to sell cultivated meat in America. A handful of other firms are trying to bring cultivated meat to market. But the hope is fading owing to continued high costs and troubles with mass production.

The UN reports meat and dairy production already accounts for 12% of humanity’s greenhouse-gas emissions, Demand for meat is skyrocketing among the growing middle classes of Africa and Asia. Lab-grown meat could help meet that demand without the world breaking its carbon budget. By contrast, two-fifths of Americans claim to restrict their meat consumption either for ethical(伦理的) reasons or environmental ones. Lab-grown meat may seem less ethically worrisome than eating animals. And the early success of plant-based meat alternatives gave investors hope. Beyond Meat, one such firm, went public in 2019, and saw its value shoot to $14 billion.

Though lab-grown meat offers an alternative to farm-grown meat, questions have been raised about how climate-friendly it can be. A study published earlier this year found that in some circumstances cultivated meat could be more polluting than the conventional stuff because the bioreactor is in great need of power to control its temperature. Consequently, only if renewable energy is used in the production process will cultivated meat cut the carbon footprint of the meat industry.

Whether this effort can make lab-grown meat attractive and cheap enough to attract consumers remains to be seen.

According to a survey, the waste of food on the dining table occupies 10% of the total grain output. Last week Meituan co-published a suggestion with a number of business organizations, calling on restaurants to stop food waste and help develop new eating habits for customers. “Restaurants should use official accounts on social media and live-streaming to promote and advocate food-saving actions,” the proposal said.

Meituan and the organizations are advocating that merchants offer guidance for consumers, including reminding them during the ordering process about the taste of the ingredients, portion sizes and other information about the dishes, to help them avoid food waste due to misleading information.

Catering associations (餐饮机构) in more than 18 provinces have also joined the campaign to remove food waste. The Wuhan Catering Association advised an “N-1” ordering code for restaurants ,where a group of 10 diners would only order enough for nine people. More food is only brought to the table if required. It has inspired people to rethink their relationship with food and waste.

On Friday, the China Cuisine Association announced that it had teamed up with Ele. me, a food delivery platform, to launch a “half-dish plan”, encouraging restaurants to provide customers with the option to order smaller portions. Besides, customers are encouraged to take their leftovers home.

To reduce food waste on social media platforms, some popular video platforms have stepped up content reviews of food-related live streams and implemented regulation of online eating shows. Now, if users search certain keywords, such as “eating show” or “competitive eaters”, a cautionary message pops up to remind them to cherish (珍惜) food and keep a reasonable diet.

Clever marketing from bottled water companies has not only convinced us that we need to drink more water, but also that expensive bottled mineral water is somehow better for us. We now drink more bottled water than ever before, with the global industry growing rapidly at 10 percent a year. By 2025, the global market is estimated to be worth $215 billion. But research shows that tap water nowadays is perfectly safe, and with added fluoride (氨化物), it is also good for our teeth. There have been studies showing that tap water contains traces of common pharmaceutical(制药的)drugs, but they have also found the same levels when testing bottled water. Although water in many areas contains chemicals,   the levels are too small to make a noticeable difference to our health.

Bottled water has devastating environmental costs, which is self﹣evident as there are already abundant reports on pollution caused by plastic bottles,   and no proven health benefits. And, does it taste better?Probably not. On the contrary, there are even blind tastings showing that tap water scores higher than most mineral water.

So, still hesitate when presented with both bottled water and tap water?Probably you should not now. My advice is to stick with tap water:   you will be reducing the global environmental cost of half a trillion plastic bottles piling up each year and taking a stand against the power of marketing.
