If you’ve ever eaten a free doughnut (甜甜圈) on the first Friday in June, you’ve celebrated the Doughnut Lassies- whether you realized it or not, National Doughnut Day was established to honor the Salvation Army volunteers who fried sugary snacks for World War I soldiers on the front line.
When the US entered World War I in 1917, the Salvation Army, a charity organization, sent about 250 volunteers (who were mostly women) to France, where the American army was stationed. The plan was to bring treats and supplies as close to the front line as possible. But the closer the volunteers got to the action, the fewer resources they could access.
Margaret Sheldon and Helen Purviance were credited with bringing doughnuts to the Wester Front. They had a handful of ingredients, including flour, sugar, animal fats, baking powder and canned milk. Doughnuts were one of the few sweet foods they could make without an oven, and once they had a fire hot enough to heat the oil, they could fry them up fast. The women had the pan to cook them in, but for other parts, they had to get creative. For example, grape juice bottles became rolling pins (擀面杖) when necessary.
Sheldon and Purviance’s pan could fit seven doughnuts at a time, and on day one, they made just 150 doughnuts for the group of 800 men. The soldiers even fought over a doughnut. Then they made some changes to their operation, and eventually made 5,000 doughnuts a day. The snacks were so popular that the volunteers earned the nickname “ Doughnut Lassies”, while the soldiers they served were nicknamed “Doughboys”.
The Doughnut Lassies’ impact didn’t end with World War I. The American soldiers’ experiences overseas made doughnuts a commonly eaten food for them back home.

Before you start feeling regretful about eating too much, consider a new study from the Center for Nutrition Research at Illinois Institute of Technology that suggests the fat in avocado (鳄梨) can help you prevent hunger and stay more satisfied longer.
The study was published in the journal Nutrients on May 8, 2019. It concludes that overweight people who added avocado to their meals as a substitute for carbohydrates (碳水化合物) like cola were able to stave off hunger longer and increase meal enjoyment. On three different days, researchers fed 31 overweight adults one of three meals with the same calories; a high-fat meal with one avocado, a high-fat meal with half an avocado, or a low-fat meal. For six hours afterward, the volunteers reported how hungry they felt.
Everyone reported feeling fuller longer after the meal featuring a whole avocado; even the meal with half an avocado helped satisfy the volunteers longer than the low-fat meal. Further tests revealed that the avocado meals helped improve an intestinal (肠的) hormone called PYY—when it drops, you feel hungry.
“For years, fats have been targeted as the main cause of obesity, and now carbohydrates have come under scrutiny (监视) for their role in appetite regulation and weight control,” said Britt Burton-Freeman, PhD, director of the Center for Nutrition Research at Illinois Tech. “There is no ‘one size fits all’ solution when it comes to best meal composition for managing appetite. However, understanding the relationship between food chemistry and its physiological (生理的) effects in different populations can reveal opportunities for addressing appetite control and reducing rates of obesity, putting us a step closer to personalized dietary recommendations.”
Although nutritional experts have long blamed fat for weight gain, more and more studies like this one indicate that eating a proper amount of healthy fat can help prevent hunger and assist with weight control.
