The food people eat is often brought in from miles away and stored using traditional cooling systems before the products hit store shelves. Ice is the most common cooling method that is used. When ice melts, it’s not reusable. Luxin Wang, one of the project’s leaders, saw the massive amounts of unrecyclable ice being used to store the fish at a fishing processing plant and the cross-contamination (交叉污染) that meltwater could spread among products or down the drain (下水道). This inspired her to look for a sustainable solution. The team got to work and created what they refer to as “jelly ice cubes”.

The ice cube scan take on various shapes and sizes and withstand temperature and pressure changes. That means that the jelly ice cubes won’t melt in hotter temperatures but rather the technology will change colors to indicate that the ice cube needs to be re frozen. The cubes won’t lose their form either. The novelty cubes can be used for 13 hours of storage and can easily be rinsed with bleach (漂白剂), and frozen again for reuse.

The research team knows that using these has huge potential to reduce water waste and food waste across the food supply chain. Food contamination is one of the biggest factors in food waste and can happen at any stage. Once ice turns to water, it can pick up bacteria and subsequently spread it between neighboring produce. However, if the jelly ice cubes are used, they can offer a reusable solution to conserve water and have a big impact on reducing food waste. These solid cubes can prevent cross-contamination that comes from melted ice.

Already mitigating (减轻) two major threats facing food production, the team plans to take their research one step further and use agricultural waste and by products as the cooling agents in their future ice cube designs. And these new innovative jelly ice cubes appear to be real winners in helping create greener food industry.

Meat cultivated (培植) from cells—with no need to raise and kill animals—is now a reality. The process of cultivating meat uses the basic elements needed to build muscle and fat and enables the same biological process that happens inside an animal. Cultivated meat is identical to conventional meat at the cellular level. But can it be made cheaply enough to replace animal agriculture?

More than 150 startups are pursuing an ambitious goal: meat that doesn’t require raising and killing animals and that is affordable and tastes and feels like the meat we eat now. They are part of a young industry aiming to use cell biology to reduce the environmental impact of the world’s ever-increasing demand for meat and change global protein production the way electric cars are shaking up the auto industry.

“We are addicted to meat as a species. It’s part of our culture,” said Believer founder Yaakov Nahmias. But “we thought about quantity rather than the environment, rather than sustainability.”

Although there are dozens of companies making this meat, none have yet reached commercial-level production in terms of scale or cost. From cell line development to bio-processor design, there are a number of scientific challenges to meet before cultivated meat is widely available at the market. Government policy is another challenge. Only Singapore and the U. S. allow sales of cultivated meat.

And while many people who have tried it say they like it, others find the idea distasteful. A recent survey from The Associated Press-NORC Center for Public Affairs Research found that half of U. S. adults would be unlikely to try it. When they were asked why, about half said they didn’t think it would be safe. Even Nahmias’10-year-old son Oren said he would only eat traditional meat. “I feel bad” for the animals, he said, “but they are yummy!”

“Until this meat costs and tastes the same as traditional meat, it will remain a specialized product,” said Bruce Friedrich, president of the Good Food Institute.

Hussam Al-Attar, a 15-year-old boy in Gaza, is able to build a device to provide electricity for the lamps of the tent he is staying in with his family.

Al-Attar got two fans at a resale market and used them to create small wind turbines (涡轮) to produce electricity. His invention led others in the camp where he stayed to start calling him the “Newton of Gaza”. That comparison involves the English scientist, Isaac Newton. Newton is known for his major scientific discoveries in the fields of physics, mathematics and astronomy more than 300 years ago. A famous story about Newton describes how an apple falling on his head led him to discover the nature of gravity.

Al-Attar and his family are staying in a tent that is partly attached to a house. He was able to climb onto the roof to set up two fans, one above the other. The wind could turn the fans, which produced small amounts of electricity. He then connected the fans to wires and built a charging station. Al-Attar also built switches to control a lighting system made out of wood.

Al-Attar’s first two attempts failed, and it took him a lot of time to develop a working system. He started developing it further, bit by bit, until he was able to extend the wires through the room to the tent, so that the tent would have light. He was happy to be able to create something to help ease “the suffering” of his family members. Now, he is just looking forward to the future when conditions can improve in Gaza.

“I am very happy that people in this camp call me the ‘Newton of Gaza’,” Al-Attar said. “Because I hope to achieve my dream of becoming a scientist like Newton and creating an invention that will benefit not only the people of the Gaza Strip, but the whole world.”
